Die lange Hitzewelle in Südfrankreich ließ die anspruchsvollen Cabernet Sauvignon Trauben voll ausreifen. Gerade die Auswahl an kleinbeerigen Trauben mit dicker Schale von alten Reben sorgt in diesem trockenen Wein für eine reichhaltige Komplexität. Marmelade-ähnliche Töne nach Kirsch- und Waldbeerenkonfitüre - typisch für den heißen Jahrgang - und Noten von Paprika und der Süßholzwurzel (Lakritz) umschmeicheln die Nase. Über einen Monat ließ man die Trauben auf der Maische liegen - der fruchtige Brei aus Traubensaft und -fleisch und Beerenschalen wurde von Tag zu Tag dunkler, bis auch das letzte Farbpigment aus den Schalen gesogen war. Eine dunkles Karminrot ist das Resultat davon. Um den Cabernet Sauvignon geschmeidig weich zu bekommen, bedarf es einer längeren Reifephase im Holzfass und auf der Flasche. Daher kann man auch bei dem 2005er Jahrgang von einem jugendlichen Tropfen sprechen. Die enorme Dichte und Fülle gefallen am Gaumen und die edlen Tannine harmonieren wunderbar mit der perfekt eingebundenen Säure. Mit viel Schmelz und einer außergewöhnlichen Würzigkeit und intensiven Frucht verabschiedet sich der herrliche Cabernet. Zu Schmorbraten, dunklen Fleisch und Wildragout schmeckt er köstlich, begleitet aber auch eine Käseplatte wunderbar.
